This is an excellent post workout salad – it’s full of electrolytes for re-hydration, omega-3s to combat inflammation, and antioxidants to flush waste from your system. Additionally, eating tomatoes with a fat like avocados makes lycopene, the cancer fighting antioxidant found in tomatoes, more bioavailable and easily assimilated by our bodies. Amazing!
Ingredients
1 c. quinoa, cooked
5 plum tomatoes, quartered
3 Persian cucumbers, halved and thinly sliced
1 avocado, pitted and sliced lengthwise
¼ red onion, peeled and thinly sliced
4 leaves basil, finely chopped
1 tbsp ground flax seed
3 tbsp olive oil
1 tbsp red wine vinegar
Salt and pepper to taste
Directions
Mix ingredients and dress with olive oil, red wine vinegar, and salt and pepper
Serves 4
