This omega rich salad is filling and nutrient dense. The combination of ingredients provides for exceptional nutrient absorption and will leave you feeling energized and clear-headed. Make extra to save and enjoy for multiple meals, or top with a lightly grilled piece of wild salmon for a tasty spring meal.

Salad:

2 bunches organic dino kale, leaves torn up stems discarded

1/2 head red cabbage, chopped

1/4 red onion, thinly sliced

1 c. cherry tomatoes, sliced

1/2 c. chopped walnuts

1/2 c. dried cranberries

1 avocado, pitted and sliced

Mix ingredients, top with avocado slices

Dressing:

3 tbsp organic honey

2 tbsp smooth Dijon mustard

2 lemons, juiced

¼ c. extra virgin olive oil

Salt and pepper to taste

Whisk ingredients together and pour over salad
